I honestly want to say from the bottom of my heart, your boot camp class was truly a once in a life time chance and I am thrilled it was in this life time.
There have been “other teachers” in Ontario that have come to to visit that I could have had a class with, but my inner voice kept telling me…there is aways something better…so wait Lora it will come.

I know with practise maybe one day I can proudly have a Lambeth Cake on display at a cake show but until then..I can’t wait for our paths to cross again.

On this beautiful day, I had to go to work to recouperate after our amazing 4 day Lambeth class. It was so much fun, and such a challenge! I feel like my head is exploding with so much information! I don’t think I have ever had a class that I have learned so many new techniques. I know that I am a long way from being even remotely… good at Lambeth, but I really enjoyed learning and I will continue to practices, practices, practices, puff, puff, puff, scrap, scrap, scrap! Dear ICES Scholarship Chairman:

I am writing you to recommend Kathleen Lange as an ICES Approved Teacher. She has been a successful Wilton Method Instructor with the following accomplishments and awards in the 21 years she was a Teacher for us:

• Imperial Club (our highest career achievement award), 2000.
• President Club, 1995.
• Hall of Fame, 1990.
• Plus the following enrollment awards: 100 pin, 200/250 pin, 500 pin, 700/750 pin, 1,000 pin, 1,500 pin, 2,000 pin.
• As of the 2001 award year she had earned 3,776 lifetime points according to our tracking records. (It’s quite possible that she has taught more, but unfortunately our records prior to 1999 are either incomplete or not machine-compatible with our current system.)

When she began teaching for Wilton, in March of 1980, she was one of our youngest Instructors. She started at a local Party Store in San Diego, called Whirligig, and then went onto J.C. Penney’s, Montgomery Ward, as well as H & H Craft and Floral Adult School … along with owning her own business in Cake & Candy Supplies and a bakery.

In my culinary class I am currently taking… it’s an 8 week class that runs twice a week from 9am to 2 pm…The class is specific to “Wedding Cakes”… (This semester)

We have baked all kinds of cakes for the last 4 weeks… (Roulades, high ratio, princess, tortes, chiffons, etc…)… But now the final 4 weeks shift to specifically wedding cakes and their assembly and decoration…

What I’d like to tell you is, that YOU single handedly have prepared me for ALL of this, from YOUR teaching and classes that I have attended. Because of the Training YOU gave me, I stand out in the group for decorating and was acknowledged by our CHEF.

While there is much “talent” in the class of 30… We are grouped up into 6 people….its Awesome to have “some” basic level of knowledge as we go hands on with fondant. That last class I took at your house where we made the cake looks like a Xmas package with a big bow on top is close to what we are making now. It’s like “De Ja Vue” for me… so the confidence level is high for me! I feel compelled to help the other 5 in my group who struggled with just rolling out the fondant, never mind cutting strips of fondant…

My Point Kathleen, is that I’ve really come to appreciate YOUR talent as a Teacher/Instructor and realize the level of information you have and are willing to Teach is top Notch!… YOU could easily be the “Chef” and teaching at Grossmont College… and I’d like to say “Thank You” again for all my classes with you..! And without a doubt, I hope to get into MORE of them with you!..

You are a Gifted Teacher and I want you to know how much you have molded me in this new passion of Cake baking and decorating, as I acknowledge what a Master YOU are at this!..
Our final due in class is a wedding cake with decorations. We have 3 in a group final.

Lastly, guess what??.. Grossmont college decided to update their “culinary program Brochures” for their program… They came in and took photos as the class baked away.. And guess WHO made the “Cover page” for the Brochure???????????????????

Your cake met every possible expectation. When I started cutting the cake it was being passed out among the guests my back was turned away from them. All over the room, as soon as someone had received their piece of cake I heard “That cake is delicious” as soon as they started eating it.

The presentation was absolutely stunning! The cake was moist, the texture was wonderful and the taste was elegant.
