Praise God for finally have met you in person, you’re so beautiful inside-out. I felt so at home the entire 2 day Boot Camp with you, your husband & mom. But most especially, I am very honored to attend your class. It was one of the most… amazing techniques I’ve seen & learned…I am totally overjoyed and overwhelmed by the results. You’re an excellent teacher…very gracious in sharing your talents without holding back and just simply wanting your students to learn.

Dear Kathy,

Wanted to thank you again for a great class in MA! I appreciate all the effort you convey all your teaching, experience and professional advice on how to practice the Lambeth Method.

I never met Betty Newman-May, but I feel I do know her thru your teaching – your heartfelt respect for her was endering.

Hope I can take another class with you in the future.

Hello Kathleen,

I honestly want to say from the bottom of my heart, your boot camp class was truly a once in a life time chance and I am thrilled it was in this life time.
There have been “other teachers” in Ontario that have come to to visit that I could have had a class with, but my inner voice kept telling me…there is aways something better…so wait Lora it will come.

I know with practise maybe one day I can proudly have a Lambeth Cake on display at a cake show but until then..I can’t wait for our paths to cross again.

Take care my dear…hugs……

Dear Kathleen,

I just wanted to say, “Thank You” for a wonderful class! You have the gift of not only being a Master Sugar Artist, but of also being an amazing teacher! I can’t wait for you to come back to Washington State!!!

I had the most wonderful time this past weekend! Your 4-day Lambeth Boot Camp was really amazing! I am more confident in my piping, special planning and not to mention the zillion and one techniques you taught us!

I walk around ‘regular work’ all day long thinking of how I can implement your teachings and launch off into my own crazy patterns and ideas. And I can’t wait to finish my practice cake this weekend to reinforce all of my new skills. PS. My hand still feels stronger from all of that pressure control 🙂

Thank you, Thank you, Thank you!

On this beautiful day, I had to go to work to recouperate after our amazing 4 day Lambeth class. It was so much fun, and such a challenge! I feel like my head is exploding with so much information! I don’t think I have ever had a class that I have learned so many new techniques. I know that I am a long way from being even remotely… good at Lambeth, but I really enjoyed learning and I will continue to practices, practices, practices, puff, puff, puff, scrap, scrap, scrap! Thank you and the butterflies and fairies for such a delightful weekend! I can hardly wait until we get to do it again!

Thank you!

Dear Kathleen,

Words can not convey my most humble gratitude for your wonderful Lambeth Boot Camp!

I wanted to learn The Lambeth Method ever since I was I young lad and watched Edith and Tony Gates teach a class here in St. Louis! And a little over thirty years into the future you amazingly answered that request!!!

I upped my skills at least by “500” percent and know EXACTLY what I need to work on to achieve the highest quality for such a fine art!!!

Not only is your Wisdom as a Master Decorator unsurpassed by very few (if any) but your skills as a teacher are so connected and gentle, you convey knowledge in such simple, easy to understand direct way that is so refreshing and comprehensible.

Trust me, it was SO worth the time and effort/money to study with you and I would recommend your class to any serious minded Cake artist.

Your grateful student,

Tim Jansen

Hi Kathy,

YOU are the BEST! For you to make my daughter, Rachel’s, wedding cake to match the design on her wedding dress was absolutely breathtaking. So beautiful. Then, the special cookies used at the rehearsal dinner for each guest, they were absolutely beautiful. Thank you!!!!! Weddings are so intimate and special.

Have a great day!

(Letter of Recommendation written by – The Wilton Director of Educational Marketing for Kathleen’s applicaton to become an ICES Approved Instructor)

Dear ICES Scholarship Chairman:

I am writing you to recommend Kathleen Lange as an ICES Approved Teacher. She has been a successful Wilton Method Instructor with the following accomplishments and awards in the 21 years she was a Teacher for us:

• Imperial Club (our highest career achievement award), 2000.
• President Club, 1995.
• Hall of Fame, 1990.
• Plus the following enrollment awards: 100 pin, 200/250 pin, 500 pin, 700/750 pin, 1,000 pin, 1,500 pin, 2,000 pin.
• As of the 2001 award year she had earned 3,776 lifetime points according to our tracking records. (It’s quite possible that she has taught more, but unfortunately our records prior to 1999 are either incomplete or not machine-compatible with our current system.)

When she began teaching for Wilton, in March of 1980, she was one of our youngest Instructors. She started at a local Party Store in San Diego, called Whirligig, and then went onto J.C. Penney’s, Montgomery Ward, as well as H & H Craft and Floral Adult School … along with owning her own business in Cake & Candy Supplies and a bakery.

Please consider Ms. Lange for your ICES Approved Teacher program, not only for her past achievements but also for her current work building the world of cake decorating and confectionery arts. Her current website – – provides wonderful testimony to that.

You came to our class today at the Art Institute of Sacramento with Susan.

I just wanted to tell you how much I enjoyed your class today with Chef Nancy and Susan. I was afraid of piping even the basic shapes but you have inspired me. I didn’t think it was possible to do that kind of art work with icing! I plan on practicing a lot!

Thanks again for a great day!

In my culinary class I am currently taking… it’s an 8 week class that runs twice a week from 9am to 2 pm…The class is specific to “Wedding Cakes”… (This semester)

We have baked all kinds of cakes for the last 4 weeks… (Roulades, high ratio, princess, tortes, chiffons, etc…)… But now the final 4 weeks shift to specifically wedding cakes and their assembly and decoration…

What I’d like to tell you is, that YOU single handedly have prepared me for ALL of this, from YOUR teaching and classes that I have attended. Because of the Training YOU gave me, I stand out in the group for decorating and was acknowledged by our CHEF.

While there is much “talent” in the class of 30… We are grouped up into 6 people….its Awesome to have “some” basic level of knowledge as we go hands on with fondant. That last class I took at your house where we made the cake looks like a Xmas package with a big bow on top is close to what we are making now. It’s like “De Ja Vue” for me… so the confidence level is high for me! I feel compelled to help the other 5 in my group who struggled with just rolling out the fondant, never mind cutting strips of fondant…

My Point Kathleen, is that I’ve really come to appreciate YOUR talent as a Teacher/Instructor and realize the level of information you have and are willing to Teach is top Notch!… YOU could easily be the “Chef” and teaching at Grossmont College… and I’d like to say “Thank You” again for all my classes with you..! And without a doubt, I hope to get into MORE of them with you!..

You are a Gifted Teacher and I want you to know how much you have molded me in this new passion of Cake baking and decorating, as I acknowledge what a Master YOU are at this!..
Our final due in class is a wedding cake with decorations. We have 3 in a group final.

Lastly, guess what??.. Grossmont college decided to update their “culinary program Brochures” for their program… They came in and took photos as the class baked away.. And guess WHO made the “Cover page” for the Brochure???????????????????

Yes, me!.. (Kathleen Lange trained)… what’s your address, I will send you one..?
What an honor….

Thank you again!

Dear Kathy,

That was absolutely the most beautiful cake I have ever seen and as delicious as well. It looked so beautiful sitting there in all its glory, against the forest background that had been painted and the fall decor in the room.

Kathy, we are so grateful to you for helping make our day so happy. You are such a sweetie!

Thanks a million!

I mention this, as I feel it qualifies me to recommend Kathleen Susan Hoover for your cake dcorating teacher’s position.

Kathy is a highly creative person with an excellent understanding of cake decorating. She also has a very enthusiastic approach to her work, which is a great asset in the teaching profession. I believe she would be a find addition to your teaching staff.

Dear Kathleen,

I want to tell you what a pleasure it was to meet you and to thank you for the time you spent with me. It was so nice to have a store owner appreciate someone coming in to their store. You were friendly and interested in my upcoming cookie decorating plans.

I think I was so impressed with you, because recently I went into a new gift store, just to find a few blocks from your store. I was the only person in the store and no one said “Hello”, May I Help You?” or “even “Come Back Again” as I left, I wondered if they even wanted customers.

I appreciate store owners who take the time to greet and talk with their customers.

I wish you much success!

I just found pictures of your work and had to tell you how impressed I am! I never imagined that there were still people who could execute Lambeth designs today! I think it is wonderful what you are doing and hope that tube decorating never goes out of style.

I have Cile Bellefleur Burbidge’s books. Her cakes are amazing. But you are stupendous!

I wish I lived closer as I have always wanted to take classes in Lambeth Method.

Take care.

Dear Kathy,

When I envisioned my wedding day, I dreamed of a traditional white wedding cake, simple but flavorful.

Your cake was the embodiment of that dream. In fact, it was one of the most complimented details of the wedding. My husband was not happy I shared the cake with the neighbors, as he wanted it all for himself.

Thank you for making a special part of my dream day come true.

Warmest regards,

Kristina Baker-King –   December 2007

I REALLY enjoyed your candy-making class and have purchased some supplies to make candy for the holidays. Thanks so much!

First of all I want to thank you for the great gingerbread house class. I truly had a great time and learned so much. I have had so many compliments on the house, and I feel those need to at least be shared with you.

Hi Kathy,

Thanks again for such a wonderful two weeks of candy classes. This was so much fun and so easy! I really thought candy making would be terribly difficult and you showed us that it’s not – just like cake decorating! You’re great at teaching the basics and allowing us to run with it.

Thank you!

Joy Delgallego –   2007

I love your cakes!

Whenever there’s an occasion that requires a cake, my family always asks me to get one from you! We enjoy them so much! There is no other cake lady like you!

Joanne Boice –   2008

I really enjoyed your class and learned a lot. I definitely will take another class from you again soon.

Your handouts are full of great information and recipes too, which was a big plus. Can’t wait to try them; even if I never decorate another cake, I have learned tips on baking and adding extras to a cake mix to make something simple even better.

You’re organized and you love what you do and it shows. I want to take your chocolate class too!

Thanks again for sharing great tips and making it so much fun.

Most Sincerely,

Jill Tatman –   September 2003

Just a note to let you know how much I enjoyed your class. I am a visual person and your demos did so much for me.

Thank you for your patience and encouragement. I am looking forward to the next class.

Dear Kathy,

I’m sorry it has taken so long to mail this collection of notes from my Girl Scout Troop!

We had a wonderful time learning to make candy and truly appreciated the
opportunity to learn, the “tricks of the trade.” Your daughter was also a great help and worked very well with my third graders.

This was a fabulous field trip; I will be passing the word along to other leaders

Thank you again and again!

Hi Kathy:

I just wanted to say thank you, for all of the effort and heart that you put into your class – it really shows!

Thank you for taking the time to share with us, not just how to put roses or stars all over a cake, but how to (start to!) Take this to another level. I’m really looking forward to the next class.

Thanks again!

Lisa Starrett –   September 2003

Dear Kathy,

On behalf of the Alumni Chapter of the Delta Delta Delta Sorority in San Diego, California, Thank You for the most enjoyable demonstration, yesterday morning.

Two people called me today to say how much they enjoyed the program and to say they thought you were terrific!

So…thank you again for making our April program an extra special one!

Warm regards,

Lisa Sewart –   April 1999

Dear Kathy,

Your cake met every possible expectation. When I started cutting the cake it was being passed out among the guests my back was turned away from them. All over the room, as soon as someone had received their piece of cake I heard “That cake is delicious” as soon as they started eating it.

The presentation was absolutely stunning! The cake was moist, the texture was wonderful and the taste was elegant.

We were so fortunate to have your professional experience and you fantastic skills at the wedding.

Many thanks to you!

Laura Kinninger –   December 2007

I very much enjoyed the cake and candy classes, I took with you. I hope to attend something with you again, soon!
