Overview / Class Description

Have you wanted to surprise your guest with a beautiful cake; which tastes as good as it looks?

In this demonstration class, Kathleen will be explaining and demonstrating some of her own techniques she has developed since 1980; making her cakes the the buzz around the world with clients, friends and students.

Most recently, October 2017; Kathleen Coached Michelle Sohan and competed as Team Trinidad & Tobago in the Milan, Italy Cake Designers’ World Championship FIPGC 2017, winning “The Best Cake Taste in the World 2017” and placed 7th; competing against 19 other countries.

Kathleen will be explaining and be demonstrating; how to create different flavor combinations; using basic cakes, adding surprise ingredients and creating simply gourmet cakes.

During the demonstration each student will be learning how to complement each cake with a different /truffle filling, mousse, fresh fruits, preserves or cake filling; how to make your own gourmet simple syrups, using liquor and other flavors.

Students will be shown how to work with bakery type non-dairy and stabilized whipped cream; when and how to use American, Italian and Swiss Buttercream.

Students may bring snacks and drinks.

NOTE: Pre-registration required by June 27th; due to limited space and ingredients needed for class. If you would like to learn cake decorating basic piping techniques, register for the entire day class. Make sure to bring a lunch for the break in between classes.

Overview / Class Description

Pre-Registration Required

This is a Basic (or) Master Course - This class is designed to be an ongoing course for students to learn at their own pace, work on a project cake or learn basic piping in order to complete a Master Course or to improve your design and decorating skills in piping.

To complete a Master Course- Each session will consist of 5 classes, once a week for 5 weeks; a total of 10 sessions to complete the entire 150 hour master course.

Within each 5 week session, students will complete 1 to 2 project cakes. Throughout the master course, a total of ten or more project cakes will be completed using royal icing for overpiping, stringwork, and floral decorations. Homework will be required to complete projects.

The final course project is a three tier, Lambeth wedding cake, which completes the master course. At the end of the course, a Certificate of Completion in the Lange Method will be obtained.

This comprehensive course consist of traditional Lambeth Method techniques with the added Kathleen Lange romantic flair and style she is well recognized in her classes.

The complete Master Course includes everything The Lmabeth Method and Kathleen Lange is know for; advanced piped borders, puffs, ruffles, overpiping, stringwork, lacework, cushions, flowers, run-outs, gum paste, figure piping and much more!

Kathleen encourages practice and repetition to master Lambeth Method piping techniques and to prefect the techniques and skills shown in class.

Wedding Cake /Gown Lace Embellishing Techniques Workshop (FULL)

Overview / Class Description

In this workshop you will learn a technique Kathleen started using in the early 90’s for making display boards and cakes.

Kathleen then developed the technique using piping gel and luster dust in the early 90's to replicate hard candy pearls and adding gold embellishments to her cakes; during the time she owned and operated her own wedding cake salon. This technique impresses, even the most distinguished cake design artist.

Learn how to transfer Victorian scrolls or other design work, by making your own embossing pattern/presses; embellishing techniques to make your wedding cakes resemble Bridal Gown design work; by using piping gel, edible dusting powders, applying highlights and dimension to your wedding cake designs.

This technique maybe used on cakes frosted with buttercream, whip cream or fondant cakes. After design is completed you may refrigerate, piping gel will not run. This technique works great, If you do not want to use hard type candy pearls, silver or gold dragees; this technique will achieve the same look without the worry of someone biting down on a hard candy.

In this class students will learn to make an edible brooch bouquet by making a gum paste bouquet holder and how to arranging Isomalt brooches into a beautiful bouquet Kathleen used in one of her new Lange/Lambeth Designs.

Students will be learning basic piping figure techniques with Royal icing and will be shown proper frosting consistencies; proper angles and techniques during this class. Students will learn how to properly make royal icing run out plaques; you will learn all procedures.

The techniques shown during class will have to dry and be finished in Part 2 class; following day. The Figures will have to dry before applying to plaques, so you will learn how to apply. If not dried you may not be able to finish you plaques.

Overview / Class Description

Attend both (Mini) Boot Camp 101 & 201 and receive a discount.

This class will be based upon the work of Joseph Lambeth; an English method and one of the most distinguished forms of cake decorating. Students will be learning basic to more advanced skills as the class progresses.

Students will learn to add more dimension to their foundations and advanced borders as they continue the class. Scalloped puffed swag border, 3-D overpiping and basic stringwork techniques.

All techniques will be show and will be completed as time permits and depends on students skill level of cake decorating piping skills.

SUPPLIES PROVIDED BY DEMONSTRATOR
Instructor will provide all cakes, royal icing, decorating tips and all other supplies needed to complete class project while attending class.
