Overview / Class Description

Students will be learning a new technique Kathleen started using in the 90’s to resemble the stitching and design work of a wedding gown.

Students will be shown how to make an embellishing transfer press for Victorian scrolls and designs from any wedding gown to resemble the gown design; learning a new way to do brush embroidery as well.

This technique is very easy, inexpensive and impressive way to make your wedding cakes a one of a kind, original design. All techniques maybe used on Buttercream, Whip Cream or Fondant type cakes.

During class students will be working with piping gel and edible paint-able luster dust, Isomalt & Flexique.

ALL SUPPLIES AND STEP-BY-STEP HANDOUTS INCLUDED TO COMPLETE PROJECT.

STUDENTS PLEASE BRING THE FOLLOWING-

• Box for completed project cake- Plastic tote if attending multiple project classes
• Apron
• Turntable
• Wet Clothes - 2- Dish towels

Attended Mini Boot Camp 101. All advanced and professional levels welcome. Great Class to perfect your piping skills for buttercream or royal icing work.

(Mini) Boot Camp 201 will be based upon the work of Joseph Lambeth; an English method and one of the most distinguished forms of cake decorating. Students will be learning more advanced skills to enhance previous learned skills in Mini Boot Camp 101.

Students will learn to add more dimension to their foundations and advanced borders as they continue the class. Scalloped puffed swag border, 3-D overpiping and basic stringwork techniques.

All techniques will be show will help in all areas of piping in buttercream or royal icing. All techniques shown, completed as time permits and depends on students skill level of cake decorating piping skills.

Overview / Class Description

During this class, depending on your skill level you have the option of attending Kathleen's FAMOUS Boot Camp 101 & 201 (or) 301-401.

Kathleen will be teaching the Old-World Joseph Lambeth Method, while modernizing with her own techniques. Basic Lambeth Techniques will be covered during Lambeth 101, with more advanced Lambeth techniques covered in Lambeth 201. This class moves much more quickly than the 4 day.

Students attending Lambeth 101 & 201 will be learning the following:
• How to hold the bag and tips properly,
• To be exact with every squeeze of their decorating bag,
• How to start the correct foundation for Lambeth,
• How to master the perfect zigzag shell, scroll, swag and puff & elongated puff borders,
• 3 dimensional over-piping techniques,
• Bead/pearl borders,
• Embellishing techniques,
• Stringwork; how to pipe and apply stringwork,
• How to pipe advanced stringwork, lace heart pieces and how to apply to your cakes,

Each student will be completing at least four sections on their individual cake dummy, learning six to eight different borders /designs or more.

Student's attending Lambeth Boot Camp 301 and 401 will be completing a project cake. Each will be increasing their knowledge from previously attending Kathleen's Boot Camp 101-201, continue learning more advanced Lange-Lambeth techniques.

Students attending the Lambeth 301 & 401 will be learning the following:

• Cushion border, dimensional work below cushion and elevated scrolls, extension work
• Figure piping birds and swans
• Side scroll embellishing and more advanced Overpiping techniques
• Royal icing flood work/run outs and gum paste plaques

All borders are shown; depending on each individual student and the skill level, all depends on how much the individual student will be able to complete and finish.

This is a VERY ADVANCED TECHNIQUE each student is learning and requires students to practice after attending the classes to perfect the techniques.

International students may not be able to do an entire project cake due to air travel; we will do smaller practice pieces depending on individual travel arrangements, space, etc.

Overview / Class Description

Students will be learning basic piping figure techniques with Royal icing and will be shown proper frosting consistencies; proper angles and techniques during this class. Students will learn how to properly make royal icing run out plaques; you will learn all procedures.

The techniques shown during class will have to dry and be finished in Part 2 class; following day. The Figures will have to dry before applying to plaques, so you will learn how to apply. If not dried you may not be able to finish you plaques.

All techniques covered in class, completion of project all depends on student’s skill levels, as time permits.
