Overview / Class Description

Prerequisite:
Basic cake decorating and piping skills required. All advanced and professional levels welcome.

(Mini) Boot Camp 101 will be based upon the work of Joseph Lambeth; an English method and one of the most distinguished forms of cake decorating.

Students will learn the basics of this method; how the foundation is key; how to hold the decorating bags and tips properly; techniques shown, will help the students learn how to make the perfect zigzag,_shell, scalloped swag border, string of pearls, roped scallop, 3-D overpiping and basic stringwork techniques.

All techniques will be show and will be completed as time permits and depends on students skill level of cake decorating piping skills.

SUPPLIES PROVIDED BY DEMONSTRATOR
Instructor will provide all royal icing, decorating tips and all other supplies needed to complete class project while attending class.

SUPPLIES PROVIDED BY STUDENT
• 6”x 4” Styrofoam cake dummy; covered with rolled fondant, placed on cardboard base board 4” larger
• Box for completed project cake
• Apron
• Turntable
• Wet Clothes - 2- Dish towels

(Mini) Boot Camp 201 will be based upon the work of Joseph Lambeth; an English method and one of the most distinguished forms of cake decorating. Students will be learning more advanced skills to enhance previous learned skills in Mini Boot Camp 101.

Students will learn to add more dimension to their foundations and advanced borders as they continue the class. Scalloped puffed swag border, 3-D overpiping and basic stringwork techniques.

All techniques will be show and will be completed as time permits and depends on students skill level of cake decorating piping skills.

Overview / Class Description

Students will be learning a new technique Kathleen started using in the 90’s to resemble the stitching and design work of a wedding gown.

Students will be shown how to make an embellishing transfer press for Victorian scrolls and designs from any wedding gown to resemble the gown design; learning a new way to do brush embroidery as well.

This technique is very easy, inexpensive and impressive way to make your wedding cakes a one of a kind, original design.

During class students will be working with piping gel and edible paint-able luster dust.

This is a special class designed by Kathleen, using her Mother in laws antique brooches made into lasting Isomalt brooches and a beautiful wedding bouquet; one of kind brooches, made from original antique brooches, manufactured by Simi Cakes.

Students will be learning to make an edible brooch bouquet using different techniques.
Working with Gum Paste, learning to work with isomalt and mold into special molds designed for hot sugar syrup and how to arranging Isomalt brooches into a beautiful bouquet; Kathleen used in one of her new Lange/Lambeth Designs.

All techniques covered in class, completion of project all depends on student’s skill levels, as time permits.

Overview / Class Description

Have you wanted to surprise your guest with a beautiful gourmet dessert cake; which tastes as good as it looks?

In this demonstration class, Kathleen will be explaining and demonstrating some of her own techniques she has developed since 1980, making her cakes, the buzz around town!
Kathleen will be explaining and be demonstrating; how to make a Chocolate Peanut butter Truffle Cake, Almond Coconut Truffle, White Chocolate Raspberry Truffle Cake, and/or any other flavor combination.

During the demonstration each student will be learning how to complement each cake with a different /truffle filling, mousse, jam, preserve or cake filling, how to make your own gourmet simple syrups, using liquor, and other flavors; giving cakes a "Simply Gourmet" flavor.

Students will be shown how to work with bakery type whipped cream frosting and embellishments, completing dessert cake with a gourmet look.
