Lambeth Method Techniques Workshop #1 - Wk After San Diego ICES Convention (FULL)

Kathleen will be teaching the Old-World Joseph Lambeth Method, while modernizing with her own techniques and methods.

This course is based on the work of Joseph Lambeth. Lambeth Method is one of the oldest English forms of cake decorating in the world. The exacting nature of the intricate over-piping and other Lambeth Method techniques; provide the ultimate challenge to make this design work the realm of only the most dedicated cake designers.

Throughout this workshop you will be working with royal icing. You will be learning precision cake dividing techniques and piping work, known as the Lambeth Method. This technique will help any cake design artist achieve the most elegant cakes for their portfolio.

Learn to be exact in every squeeze of the bag, how to make a perfect stringwork, zig-zags, shells, puffs and string of pearl borders with decorating tips. Learn to apply stringwork, ring border, cushion work and lace work by hand and how to apply and complete at least four different designs on your cake dummy, during the four day workshop and on your display board for examples amd future practice.

Each student will need to bring 1-10" Cake Dummy on 14" Bevel/Drum Base; if traveling you may bring 1- 10" or 12" Cake Dummy with no bevel; covered with white or ivory rolled fondant and box to take cake home. All other frosting, decorating supplies and lunch will be provided during classes.

If unable to bring cake dummy covered with fondant, please let Kathleen know; she will provide one for an extra charge.

NOTE: If you are only able to attend 1,2 or 3 days of the 4 day workshop, sign up under Lambeth Techniques Workshop #2; classes will be $150 each day you are able to attend. You will learn as many basic and intermediate techniquss of the method, as time allows.

*In all classes, supplies are usually extra, unless specified. If you are unable to bring supplies or practice frosting to class, the instructor will make arrangements for an additional fee, depending on class. Arrangements should be made with instructor, prior to class.

Class sizes are limited to 4-6 students, depending on type of class. Pre-registration, with 1/2 class fee as deposit or full payment required 48 hours in advance. Class dates available upon request, classes dates subject to change due to availability or enrollment cancellations. Bring a family member, from same household; receive $10 off second class fee, workshops only.

REFUND POLICY: Deposit of 1/2 tuition fee is due at the time of registration. Please note tuition fee deposits are non-refundable 48 hours prior to start date of class. The tuition balance must be paid 48 hours prior to the first day of class. If full payment is not received within 48 hours, your seat will not be held. Students notifying Confectionary Chalet 72 hours prior to class date will recieve full refund of all paid deposits / tuition.

The number of paid students will determine if the class will be held. Should class be canceled due to low student enrollment; a full refund will be given. If you are unable to attend a class, you may arrange to take the class at another date and time, if space allows. Your seat in class is non-transferable. Due to space limitations only registered students are allowed in class. Please be prepared and ready to begin decorating upon your arrival to class. Thank you!
