Private & Group Instruction Available: Prices starting at $60 -$75 per person, per 3-4 hour class; $150 per person, per 6- 8 hour class; depending on class type and enrollment. Supplies extra; each student will recieve a supply list, prior to attending class. Have you wanted to learn a specific cake decorating technique without taking a comprehensive course, or master a technique you have learned already, no time to practice? This is the workshop for you! This ongoing workshop is designed for the cake decorating student who cannot commit to several weeks out of your hectic schedule.

Kathleen is now offering short ongong boot camp classes, learning one of these different techniques during each class; assemble, crumb coat and frost a cake; using whip cream frostings to frost and deocrate; make a dessert type cakes; buttercream roses or royal icing flowers; borders, figure piping, stringwork; rolled fondant; wedding cake assembly; topsy turvy construction;fresh floral designs for wedding cakes; airbrushing techniques or any other technique you have been wanting to learn or master.

Each technique will be an individul class; supplies extra, depending on technique wanting to learn.

Lambeth Method Techniques Workshop #2 - Wk After San Diego ICES Convention (FULL)    $150.00

NOTE: This is the workshop for the students who can only attend 1, 2 or 3 days of the 4 day workshop after the San Diego ICES Convention. Each day is $150. Class size is limited, pre-registration is required. Thank you!

Kathleen will be teaching the Old-World Joseph Lambeth Method, while modernizing with her own techniques and methods.

This course is based on the work of Joseph Lambeth. Lambeth Method is one of the oldest English forms of cake decorating in the world. The exacting nature of the intricate over-piping and other Lambeth Method techniques; provide the ultimate challenge to make this design work the realm of only the most dedicated cake designers.

Throughout this workshop you will be working with royal icing. You will be learning precision cake dividing techniques and piping work, known as the Lambeth Method. This technique will help any cake design artist achieve the most elegant cakes for their portfolio.

Learn to be exact in every squeeze of the bag, how to make a perfect stringwork, zig-zags, shells, puffs and string of pearl borders with decorating tips. Learn to apply stringwork, ring border, cushion work and lace work by hand and how to apply and complete at least four different designs on your cake dummy, during the four day workshop and on your display board for examples amd future practice.

Each student will need to bring 1-10" Cake Dummy on 14" Bevel/Drum Base; if traveling you may bring 1- 10" or 12" Cake Dummy with no bevel; covered with white or ivory rolled fondant and box to take cake home. All other frosting, decorating supplies and lunch will be provided during classes.

If unable to bring cake dummy covered with fondant, please let Kathleen know; she will provide one for an extra charge.

Prerequisite: Advanced /Professional skills required.

Kathleen will be teaching the Old-World Joseph Lambeth Method, while modernizing with her own techniques and methods.

If you have some knowledge in making shells, zig zags and stringwork, then you can learn Lambeth Techniques.

This course is based on the work of Joseph Lambeth. Lambeth Method is one of the oldest English forms of cake decorating in the world. The exacting nature of the intricate over-piping and other Lambeth Method techniques, provide the ultimate challenge to make this design work the realm of only the most dedicated cake designers.

Throughout the class you will be working with rolled fondant, gum paste, pastillage and royal icing. You will be learning precision piping, to help in future decorating skills; learn to be exact in every squeeze of the bag, making hundreds, if not thousands of frosting, gum paste flowers and lace work by hand, to complete several designs on cake dummies, covered with rolled fondant.

Each 6 week course session, you will complete one or two cake designs with famous Lambeth design work such as the basket of roses, ship cake, petunia wedding cake, cushion lattice work, ring border with trellis and several famous designs known as Lambeth cakes.
Each session is 6 weeks, with a total of 10 sessions to complete the 150 hour course.

After this complete course, your decorating skills will most definitly improve. Practice, Practice and more practice.

Beginning Cake Decorating Workshop    $80.00

Have you always wanted to learn cake decorating? Not sure where to start? This is the class for you! In this class you will be learning baking hints, leveling, torting, filling, frosting and beginning decorating techniques for all occasions; learn to decorate simple children and adult birthday cakes, in this four week workshop.

First class Kathleen will be demonstrating; second through the fourth class you will be learning basic borders, pattern transfers, figure piping, 3-D theme cakes, basketweave, roses, stems, vines, leaves, and much more.

Wedding Cake Embellishing Techniques Workshop    $60.00

In this class you will learn a technique Kathleen developed in the 90's; during the time she owned the bakery.

Learn how to transfer Victorian scrolls or other designwork, by making your own embossing pattern/presses.

Kathleen will show embellishing techniques to make your wedding cakes resemble Bridal Gown embellishments; using piping gel, edible dusting powders and how to add highlights and dimension to your wedding cake designs.

This technique has never been taught and impresses even the most distinguished cake design artist.

Each student will bring a 10" cake dummy or real cake
covered in rolled fondant, all other supplies included with class fee.

Truffle Dessert Cakes (Demo)    $60.00

Mon., Eve., 9/20/2010 - 6:30 PM - 9:00 PM - 1 Day Class

Have you wanted to surprise your guest with a beautiful gourmet dessert cake; which tastes as good as it looks?

In this demonstration class, Kathleen will be explaining and demonstrating some of her own techniques; she has developed over the past 30 years to make her classes and wedding cake buisness a success and buzz around town.

Kathleen will be explaining and demonstrating how to make a Chocolate Orange Truffle Cake and a White Chocolate Raspberry Truffle Cake or other flavor combination; depending on students.

Students will be learning how to compliment each cake with different ganache/truffle fillings, whipped ganache, mousse, jam, preserves or cake fillings; how to make your own gourmet simple syrups; using liquors, and oil base flavorings to intensify the gourmet flavor you are trying to achieve. Durning class you will also be learning how to stabilize real whip cream and use a Bakery Non-Dairy Whipped Topping; learning embellishment designs to complete your gourmet dessert cakes. All recipes included and completed cakes will be shared in class.

Professional Wedding Cake Workshop    $80.00

Prerequisite: Basic and Intermediate skills required. Learn the art of making a wedding cake the professional bakery way.

In the first class, Kathleen will be explaining and demonstrating the basics of designing, baking,
leveling, torting and filling, stacking, separating, frosting, decorating and serving a wedding cake properly.

Learn how to use different cake stands and arrange fresh flowers; make a professional floral bow, to achieve beautiful corsage bouquets and finish your ultimate wedding centerpiece.

Chocolate Truffle Workshop    $70.00

Have you wanted to learn how to make, melt in your mouth truffles…this is the class for you!

In this class you will be learning to make five to six basic and liqueur type chocolate truffles and receive all the recipes. Each student will learn to roll truffles in different coatings, dip in chocolate, mold, decorate using cocoa butter transfers,drizzling techniques and box your truffles in class.

All chocolate truffles made in class will be divided among the students to take home; at least one pound or more. All supplies included with this workshop.

Designer Cookie Workshop    $60.00

Have you been wanting to learn how to make beautiful decorated cookies for your next event? This is the class for you!

In this cookie workshop you will be learning how to make, roll, cut and bake the perfect cookies for any tea, bridal shower, birthday or wedding. Kathleen will be showing the students how to bake cookies on a stick, different ways of coating and decorating the cookies using melting chocolate, royal icing and rolled fondant.

Each student will be taking home the cookies we made and decorated in class. All supplies and recipes included with workshop. Please bring a container to take home cookies; at least a 9 x 13 size.

Chocolate Candy Workshop    $70.00

Tues. Eve., 10/26/2010 - 1 Day

Learn the basics of working with confectionary chocolate coatings; melting, flavoring, coloring and molding.

During class you will be receiving all recipes of candies made in class. Each student will learn to make peanut butter cups, coconut bonbon's, peanut butter bonbon's, nut clusters, dipped dried and fresh fruit, quick cream centers, suckers, coffee spoons and much more, as time allows.

Each student will help make, wrap and take home candies we prepare in class.
