Private and Group Instruction: Prices depend on class type, enrollment and supplies needed. Out of town classes available (with 3 to 6 months advance notice) Specific costs regarding accommodations, travel, meals, and classes need to be individually assessed depending on location.  Minimum 10 people, Maximum 20 people.

Tea Party Mini Fruit Tart Class (FULL)    $60.00

In this demonstration and hands-on class, you will learn to make irresistible mini fresh fruit tarts for your next tea party or wedding shower. Learn to make a buttery pastry, roll & place in tart molds. Learn to make a delicious custard filling, white chocolate ganache, decorate with fresh fruit and finish with a luscious glaze. Chocolate Truffle Workshop (FULL)    $60.00

Have you wanted to learn how to make, melt in your mouth truffles…this is the class for you. In this class you will learn to make five to six basic and liqueur type chocolate truffles and receive all the recipes. Each student will learn to roll truffles in different coatings, dip in chocolate, mold, decorate using cocoa butter transfers,drizzling techniques and box your truffles in class. Chocolate truffles made in class will be divided among the students to take home; at least one pounds or more. All supplies included with this workshop.

Truffle Dessert Cakes (Demo)    $60.00

Mon., Eve., 3/15/2010 - 1 Day Class

Have you wanted to surprise your guest with a beautiful gourmet dessert cake, which tastes as good as it looks? In this demonstration class, I will explain and demonstrate using basic cakes flavors; showing how to turn them into a simple gourmet dessert cake. In class I will be showing a Chocolate Truffle Cake and a White Chocolate Raspberry Truffle Cake. You will learn how to compliment each cake with different ganache/truffle fillings, whipped ganache, mousse, jam, preserves or cake fillings; how to make your own gourmet simple syrups; using liquors, and oil base flavorings to intensify the gourmet flavor you are trying to achieve. You will also learn how to make different flavors of mousse fillings, designed to go with the flavors of your cakes. Learn how to stabilize real whip cream and use a Bakery Non-Dairy Whipped Topping. Designer Cookie Workshop    $60.00

In this cookie workshop you will learn how to make, roll, cut and bake the perfect cookies for any tea, bridal shower, birthday or wedding. You will also learn how to bake cookies on a stick, different ways of decorating the cookies using buttercream, melting chocolate, royal icing and rolled fondant. Each student will be taking home the cookies we made and decorated in class. All supplies and recipes included with workshop.

Easter Candy Workshop    $60.00

Tues. Eve., 3/23/2010 - 1 Day Class

Learn the basics of working with confectionary chocolate coatings. You will receive recipes and learn to make peanut butter cups, coconut bonbon's, peanut butter bonbon's, nut clusters, dipped dried and fresh fruit, quick cream centers, suckers, coffee spoons, fudge eggs, marshmallow filling and much more, as time allows. Each person will help make, wrap and take home over a pound of candies we prepared in class. All supplies and recipes included with workshop.

Wedding Cake Embellishing Techniques    $60.00

Thurs. Eve., 3/25/2010 - 1 Day

In this class you will learn a technique I developed in the 90's; during the time I owned my bakery. Learn how to transfer victorian scrolls or other design work by making your own embossing press. Learn to make embellishing look similar to Bridal Gown embellishments using piping gel, edible dusting powders and how to add highlights and dimension to your wedding cake designs. This technique has never been taught and impresses even the most distinguished cake design artist. Each student will bring a 10" cake dummy or real cake covered in rolled fondant, all other supplies included with class fee.

Beginning Rolled Fondant Cake Workshop    $60.00

Prerequisite: Basic cake decorating skills required. Have you always wanted to learn how to make breath taking rolled fondant cakes? Are you afraid to work with fondant on your own? This is the class for you! You will learn to make your own fondant from scratch, adding your own flavors and coloring. We will also work with ready made fondant and apply to your own cake. First class demonstration, second class hands on participation. Each student will complete their own cake in the second class. Supplies extra, list available first class meeting.

Intermediate/Advanced Cake Decorating Workshop    $80.00

Tues. Eve., 5/4/2010 - 5/25/2010 - 4 Weeks

Prerequisite: Knowledge of basic decorating skills. Intermediate, advanced, and brush-up students welcome. Learn to make several different types of frosting tip flowers; refresher on roses, wild roses, apple blossoms, violets, pansies, chrysanthiums, daisies , working with buttercream and royal icing. Learn new borders, side garlands, string work, run sugar, chocolate molding, stacking of a cake and much more in this four week workshop. Supplies extra, list available before first class.

Lambeth Method Cake Decorating Course - Ongoing    $150.00

Thurs., Eve., 5/6/2010 - 6/10/2010 - 6 Weeks

Prerequisite: Advanced /Professional skills required.

Kathleen will be teaching the Old-World Joseph Lambeth Method, while modernizing with her own techniques and methods.

This course is based on the work of Joseph Lambeth. Lambeth Method is one of the oldest English forms of cake decorating in the world. The exacting nature of the intricate over-piping and other Lambeth Method techniques, provide the ultimate challenge to make this design work the realm of only the most dedicated cake designers.

Throughout the class you will be working with rolled fondant, gum paste, pastillage and royal icing. You will be learning precision piping, to help in future decorating skills; learn to be exact in every squeeze of the bag, making hundreds, if not thousands of frosting, gum paste flowers and lace work by hand, to complete several designs on cake dummies, covered with rolled fondant.

Each 6 week course session, you will complete one or two cake designs with famous Lambeth design work such as the basket of roses, ship cake, petunia wedding cake, cushion lattice work, ring border with trellis and several famous designs known as Lambeth cakes.
Each session is 6 weeks, with a total of 10 sessions to complete the 150 hour course.

Professional Wedding Cake Workshop    $80.00

Prerequisite: Basic and Intermediate skills required. Learn the art of making a wedding cake the professional bakery way. In the first class, I will be explaining and demonstrating the basics of designing, baking, leveling, torting, filling, stacking, separating, frosting/fondant and serving a wedding cake properly. Learn how to use different cake stands and fresh flowers when designing your ultimate wedding centerpiece. Each student will complete a small wedding cake the second class.
